BLUEBERRY LEMONADE

INGREDIENTS

  • 1 lemon (half for juice + zest, half for slices)

  • ½ cup fresh blueberries

  • ½ cup water

  • Raw honey (to taste)

  • Cold filtered water (for filling the jar)

  • Ice (optional, for serving)

INSTRUCTIONS

  • In a small pot, add:

  • ½ cup water

  • Juice from half a lemon

  • A little lemon zest

  • 1 cup Fresh blueberries

  • 1/4 cup - A touch of honey (just enough to begin the magic)

  • Heat gently. Let the mixture come to a soft boil, just enough to break the berries and infuse the color and tang (approx 8-10 minutes, keep stirring)

  • Once it’s boiled, remove from heat.

  • In a clean glass jar, add the sliced other half of the lemon.

  • Pour the warm blueberry-lemon mixture over the slices, then fill the jar with cold water until full.

  • Let it rest for 2 hours. Let the flavor marry, deepen, soften. This is your infusion time.

  • After resting, strain the mixture into a new glass jar.

  • Taste. If more sweetness is needed, warm the lemonade slightly and stir in more honey until it’s just right.

  • Serve over ice, or sip as-is.
