SIMPLE GARDEN SALAD

INGREDIENTS

  • 2 cups fresh spinach leaves

  • 2 cups fresh kale, chopped and stems removed

  • 1 large cucumber, sliced or diced

  • 1 red bell pepper, chopped

  • 2–3 tablespoons extra-virgin olive oil

  • Juice of 1 lemon (or 2 tablespoons)

  • Sea salt, to taste

  • Freshly ground black pepper, to taste

  • Optional: pinch of chili flakes for a little kick

INSTRUCTIONS

  1. Prep the greens: Wash spinach and kale thoroughly. Remove kale stems and chop into bite-sized pieces.

  2. Massage the kale: Drizzle 1 tsp olive oil over kale and gently massage for about 30 seconds to soften.

  3. Combine vegetables: Add spinach, cucumber, and red bell pepper to a large salad bowl with the kale.

  4. Dress the salad: Drizzle remaining olive oil and fresh lemon juice over the salad. Sprinkle with sea salt, black pepper, and optional chili flakes.

  5. Toss & serve: Gently toss until everything is evenly coated. Serve immediately for maximum freshness.
