THE HOUSE GREEN DRESSING

SPINACH KALE AVOCADO LIME DRESSING

This is hands down my favorite dressing. It’s my take on the green goddess, though to be honest, I never loved the classic version. But I do love greens, and this one just works. It’s creamy, tangy, full of flavor, and always in rotation in my kitchen. It’s the kind of dressing that turns any bowl into a whole experience. I know you’ll love it too.

INGREDIENTS

  • 2 medium very ripe avocados (about ½ cup mashed)

  • ½ teaspoon each of salt and pepper (mixed)

  • ½ cup olive oil or avocado oil

  • Juice of ½ a lime or lemon

  • 1 garlic clove (I use 2 or 3 because we love garlic)

  • ½ cup plain yogurt

  • 1 cup fresh spinach (you can go up to 1½ cups — I love using kale. I prefer it over the spinach most times or I will blend the 2)

  • 5 tablespoons water, to start (add more as needed for consistency)

BONUS Optional Add-In:

  • 1 tablespoon nutritional yeast (for a light cheesy flavor)

To finish:

  • A little more salt or pepper to taste

INSTRUCTIONS

You’ll need a blender or food processor, and a clean glass jar or bottle to store the dressing when it’s done.

  1. Add everything to your blender: avocados, yogurt, oil, lime juice, garlic, greens, salt and pepper, and water.

  2. Blend for at least 30 seconds. Keep going until it’s smooth and creamy. Add more water if it feels too thick.

  3. Taste as you go. I usually add a little extra garlic or salt at the end, depending on what my bowl needs.

  4. Pour it into a glass jar or bottle and pop it in the fridge.

This dressing keeps for about 2 weeks, though it never lasts that long in my house.
