INGREDIENTS

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ¾ cup granulated sugar

  • 3 large eggs

  • ½ cup extra virgin olive oil

  • ½ cup whole milk or buttermilk

  • Zest of 1 lemon and 1 orange

  • 2 tablespoons fresh citrus juice (lemon or orange)

  • ½ teaspoon vanilla extract

INSTRUCTIONS

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil and line the bottom with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

  3. In a large bowl, whisk sugar and eggs until pale and fluffy. Slowly drizzle in olive oil while whisking until smooth.

  4. Add milk, citrus zest, citrus juice, and vanilla. Mix until combined.

  5. Gently fold in the dry ingredients until just incorporated. Do not overmix.

  6. Pour batter into the prepared pan and bake for 35–40 minutes, or until golden and a toothpick comes out clean.

  7. Allow cake to cool completely before adding the topping.

  8. Garnish with fresh berries or figs, drizzle with honey, and finish with a touch of olive oil if desired.

Serve at room temperature. Store covered in the fridge, but bring to room temp before serving for the best flavor and texture.
