SUNRICE BOWL
A turmeric-kissed rice bowl layered with sautéed vegetables, warming spices, and smooth avocado. A vibrant healing meal that’s as grounding as it is energizing.
INGREDIENTS
FOR THE RICE:
1 cup uncooked brown rice - any rice will do
1 ½ cups water or low-sodium vegetable or chicken broth
1 teaspoon turmeric
½ teaspoon sea salt
1 tablespoon olive oil or coconut oil
FOR THE SAUTEED VEGETABLES:
1–2 tablespoons olive oil
1 cup mushrooms, sliced
1 bell pepper, chopped
½ teaspoon cumin
½ teaspoon smoked paprika
½ teaspoon garlic powder
Pinch of chili flakes (optional)
Sea salt to taste
FOR LAYERING:
1 cup black beans, drained and rinsed
1 avocado, sliced or mashed with lime and sea salt
Fresh lime juice (for drizzling)
Optional toppings: chopped cilantro, toasted sesame seeds, pumpkin seeds, or crushed cashews
INSTRUCTIONS
1. Cook the turmeric rice.
In a medium pot, combine rice, water or broth, turmeric, sea salt, and oil. Bring to a boil, then reduce heat to low. Cover and simmer for 15–18 minutes or until rice is fluffy and liquid is absorbed. Let it sit covered for 5 minutes, then fluff with a fork.
2. Sauté the veggies.
In a skillet, heat the olive oil over medium heat. Add mushrooms first and let them cook undisturbed for a few minutes until they start to brown. Add bell peppers, cumin, paprika, garlic powder, and chili flakes. Sauté until the veggies are tender and fragrant, about 6–8 minutes. Add sea salt to taste.
3. Warm the beans.
Gently warm the black beans in a small saucepan or skillet. You can add a splash of lime juice or a pinch of cumin for extra flavor.
4. Build your bowl.
Start with a generous scoop of golden turmeric rice. Add the sautéed veggies, black beans, and avocado. Squeeze fresh lime juice over everything. Finish with toppings of your choice: cilantro, sesame seeds, toasted nuts, or whatever you have on hand.
