SWEET POTATO + AVOCADO SALAD

INGREDIENTS

  • 1 medium sweet potato, roasted & cubed

  • 1/2 avocado, diced

  • 1/4 cup cooked quinoa (for fiber & prebiotics)

  • 1 handful baby spinach or arugula

  • 1 tbsp pumpkin seeds (for zinc & gut support)

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • 1/4 tsp turmeric (anti-inflammatory boost)

  • Sea salt & black pepper to taste

INSTRUCTIONS

  1. Roast the sweet potato cubes at 400°F for 20–25 minutes, until tender.

  2. In a bowl, combine the roasted sweet potato, avocado, quinoa, and greens.

  3. Drizzle with olive oil and lemon juice, then season with turmeric, salt, and pepper.

  4. Top with pumpkin seeds and toss gently.
