GARLIC + HERB MINERAL BROTH
INGREDIENTS
2 heads of garlic (yes, full heads that are broken into cloves, smashed gently, skins on)
1 yellow or white onion, quartered
1 tablespoon olive oil or avocado oil
1 small handful fresh parsley
1 teaspoon dried thyme (or a few sprigs fresh if you have it)
1 teaspoon black peppercorns
1 bay leaf
6 to 8 cups filtered water
Optional: a small piece of kombu or a splash of coconut aminos for depth
INSTRUCTIONS
Gently awaken the aromatics: In a heavy pot, heat the olive oil over low heat. Add the smashed garlic cloves and quartered onion. Let them cook gently, just until they begin to soften and release their aroma for about 5 to 7 minutes. Do not brown.
Build your base: Add the parsley, thyme, peppercorns, bay leaf, and optional kombu or splash of coconut aminos. Stir once with intention.
Pour in the water, bring everything to a soft simmer, and cover slightly.
Simmer with patience: Let it simmer low for 2 hours. You want the garlic to be mellow and sweet, not bitter or burnt.
Strain and serve: Strain the broth, pressing down gently on the garlic and onion to release their essence. Discard solids.
Finish and use: Taste. Add sea salt if needed. Sip it warm, use it as a base for soups, or cook your grains and veggies in it.
