ROASTED GARLIC GREEN BEANS
INGREDIENTS
1½–2 lbs fresh green beans, trimmed
4–5 cloves garlic, smashed or thinly sliced
3 tbsp olive oil
1 tsp kosher salt
Fresh cracked black pepper
1 tsp fresh rosemary, finely chopped
1 tsp fresh thyme leaves
Optional finish:
Lemon zest
Shaved Parmesan
HOW TO MAKE IT
1. Prep
Preheat oven to 425°F. - ↓↓ see below ↓↓
IMPORTANT: If your green beans are thin or your oven runs hot, roast at 375°F - 400°F to prevent burning.
Line a baking sheet with parchment or leave bare.
2. Season
In a large bowl, toss green beans with:
olive oil
garlic
salt
black pepper
rosemary
thyme
Spread in an even layer. Do not crowd.
3. Roast
Roast for 15 minutes, then toss.
Return to oven and roast another 10–15 minutes, until:
beans are tender
edges are lightly blistered
garlic is golden, not burned
4. Finish
Remove from oven.
Optional:
zest lightly with lemon
finish with shaved Parmesan
NOTES FROM MY TABLE
High heat is key! Lower temps make beans limp.
Don’t overcrowd the pan or they’ll steam.
Fresh herbs work best, but dried can be used at half the amount.
Lemon zest brightens without turning it into a citrus dish.
