LEMON & GARLIC ROASTED CAULIFLOWER
INGREDIENTS
1 large cauliflower, cut into florets
¼ cup olive oil
Zest of 1 lemon
3 cloves garlic, minced
1 tsp garlic powder
½ tsp onion powder
½ tsp paprika
¼ tsp crushed red pepper (optional)
Salt & freshly cracked black pepper
Optional finish: parsley or parmesan
HOW TO MAKE IT
Preheat oven to 400°F.
Toss cauliflower with olive oil, garlic, lemon zest, and spices.
Spread evenly on a baking sheet (don’t crowd).
Roast 30–40 minutes, flipping halfway.
Finish with a squeeze of lemon juice if needed.

Space equals browning. Crowding steams vegetables, and we don’t do that.
