LEMON & GARLIC ROASTED CAULIFLOWER

INGREDIENTS

  • 1 large cauliflower, cut into florets

  • ¼ cup olive oil

  • Zest of 1 lemon

  • 3 cloves garlic, minced

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

  • ¼ tsp crushed red pepper (optional)

  • Salt & freshly cracked black pepper

  • Optional finish: parsley or parmesan

HOW TO MAKE IT

  1. Preheat oven to 400°F.

  2. Toss cauliflower with olive oil, garlic, lemon zest, and spices.

  3. Spread evenly on a baking sheet (don’t crowd).

  4. Roast 30–40 minutes, flipping halfway.

  5. Finish with a squeeze of lemon juice if needed.

NOTES FROM MY TABLE

  • Space equals browning. Crowding steams vegetables, and we don’t do that.
