SLOW-BAKED ONIONS & LEEKS
INGREDIENTS
3 large yellow onions, sliced into thick wedges
2 large leeks, cleaned well and sliced lengthwise
¼ cup olive oil
1 tsp garlic powder
½ tsp onion powder (yes, even with onions)
½ tsp dried thyme
¼ tsp smoked paprika
Salt & freshly cracked black pepper
Optional finish: splash of balsamic or lemon zest
HOW TO MAKE IT
Preheat oven to 325°F.
Add onions and leeks to a baking dish.
Drizzle with olive oil and toss gently.
Season with all spices, salt, and pepper.
Cover tightly with foil.
Bake 60–75 minutes, stirring once halfway.
Remove foil for the last 10–15 minutes if you want light caramelization.
